Tangy pickle slaw
Tangy bread & butter pickles, crunchy cabbage and spicy jalapeños - this slaw is perfect for piling onto a crispy chicken or fish sandwich, a veggie burger or whatever you fancy.
Serve on a soft roll slathered with hot sauce-spiked mayo - and you’ve got a sure winner on (and in) your hands!
This slaw is from the recipe for Fried Chicken Sandwiches with Slaw and Spicy Mayo from Son of a Gun restaurant in Los Angeles via Bon Appetit.
Here’s what you need for the pickle slaw:
Bread & Butter Pickle Slaw
1/2 cup Bread and Butter Pickle slices, plus 1/4 cup pickle juice (Note: Catie’s bread & butter pickles are sliced thick so they stay crunchy, but for this recipe, we like to cut each slice crosswise to make thinner rounds.)
4 cups thinly sliced cabbage
1/2 small red onion, thinly sliced (We also like to sliver a few of the sweet white onions from our pickles and add them to the mix!)
1 small jalapeño, thinly sliced
Combine ingredients and then chill while you prepare the chicken (grilled chicken or fish would also be great with this slaw, or any kind of burger).
Slather the rolls with mayonnaise mixed with hot sauce, top with chicken, pile on the slaw and serve with plenty of napkins!
Enjoy!
